Siargao comes to Cantina Rooftop for one night as part of this year’s Ubud Food Festival.

Salt, smoke, vinegar, fire. The kind of food that doesn’t sit quietly on the table.

Dom Hammond and Chef Dre bring the Filipino favourites people know them for, from sharp kinilaw to smoky, late-night bites made for eating with your hands and ordering one more drink.

Chef Cristian comes in from the other side, with his Chilean roots and Latin American instinct for acid, char, heat, and balance.

Three chefs on one rooftop. Different kitchens. Same appetite.
